I just wonder - is it possible to extract languages from the different PPM's, and make my own language pack with only the languages i want?
i haven't seen any programs i can do this with yet - but is it possible in the theory?

Yes it's possible.
Haven't tried it myself but a guy called Finn did a few ppm's with added languages/T9 dictionaire's. Here's (http://www.geocities.com/finn2k1/) his page... check the flashing section for his modified flashes. There also a tutorial.
