8310e - Missing Shortcuts

Can anyone tell me why I'm missing shortcuts 4-4-2 and 4-4-7 from my 8310e, and why my mate's 8310 gets a fancy Nokia shaking hands logo and sound on start up and mine doesn't! It's v 06.20 NHM-7.

The e on the end of the model number tells me that the phone was flashed with CUSTOM orange firmware if you want the extra menus etc you will have to have its profile reset to a OEM one.
