This really surprises me, but the User's Guide for your phone does describe what a JAR file is.
Iin mobile phone terms, it's mainly the file extension for Java games. Series 40 phones also requires a JAD file, but Series 60 Symbians do not.

JAR (Java ARchive). It appears to be a packed (zipped) file. It's just a .zip that has the game in it, allowing easy management of the java apps and adding to the security, in the effect that it just gets copied and executed, rather that having install instructions, like a .sis file.
You can just open it with Winzip or Winrar. If you have a good phone browser, like Psiloc's Explorer, you can just push RIGHT and open it, as well as unpacking files inside. It does not add to archive, so in order to modify it you need to unpack fully, modify, then repack.
A .JAD (Java Application Descriptor) file is only needed for some phones, and is a pain in tha *ss, if you ask me. It contains info about the game like the size of the archive (if your phone needs a JAD and you modify the archive, you need to modify the JAD as well). It contains name, size, version, etc etc. It might be for phones that are not able to read info from a .zip file, so this is a helper.
