I'm new to this so can anyone tell if I can upgrade my 8210, how and to what?

You will need a Flasher cable for the first time with the 8210 connector and you need a 8210 Mbus Datacable.....

try read the tutorial section...it speard everwhere on the net....
if you smart you will find it......if not you are not lucky....

Don't worry,
Use Rolis flasher(You can download it from download section)
download a full 8210 flashfile.(ppm+mcu+eeprom)
use "write" option in this Rolis flasher and write the flash to your phone (Address from 00200000 - 00400000)
connet to the mbus cable
Calculate FAID(Sometimes you must unlock the phone) by clicking Magnify Glass icon in eeprom tools 3.1
