Two ways: You can either know the offsets for the game scores, or you can find them yourself.

To find them yourself do the following:
Flash your phone. Open the flash file and search for your valid highscore (in hex not decimal). Not the offsets where you find it.
Play untill you get a new highscore. Flash your phone again and search for the new highscore.

I normally use Ultraedit, but you can use any hex editor.
