Acccchhh....OK I am dumb. I followed all the instructions except "remove the SIM card". What have I broken by keeping the sim card in while unlocking it?

is not important
if you donot remove the sim card it will not damage you fone
it is just a safety precaution
dont worry it did not harm your fone
