The security code is for the phone what the PIN code is for the SIM card. With the security code, you can "lock" your phone so that it can be used only with YOUR SIM card.... or you can lock the phonebook memory, so that nobody can delete or add something on your phone, as trying to do so will require the security code. The default security code in Nokia's (when they are new, or the code hasn't been changed by first user) is 12345. This can be changed by the user under settings - security settings - access codes - change security code (menu 4-7-6-1 on a 6610)
Unlocking the phone does not require nor change that code. Unlocking means to "un-sim-lock" a phone which has been set to work with only a specific SIM or a specific Network operator. But usually software used to unlock the phone can also find out the security code, or change it. For this purpose it is not necessary to flash the phone.
The security code can be between 5 and 10 digits long, and after trying to enter the incorrect security code (by a thief or whoever tries to access your phone) 5 times (some models 10 times) the phone won't accept further inputs for a specific time, hence make the phone worthless for someone else who's not got unlocking software.
